Right-click a user list and select Rename. The name of the user list becomes editable in place. Edit the name as necessary and click somewhere outside of the name field to accept the change.

Right-click a user list and select Properties. On the General tab of the User List Properties dialog, edit the name as necessary in the Name field and click OK.
